Chunky Chipotle Chili
- Prep Time: 15 minutes
- Cook Time: 20 minutes
- Yield: 6 servings
- 1/3 cup Shedd's Spread Country Crock® Omega Plus
- 1 small onion, chopped
- 1 small green bell pepper, chopped
- 1 clove garlic, finely chopped
- 1 tsp. ground chipotle chile pepper
- 1 lb. lean ground beef
- 1 can (16 oz.) red kidney beans, rinsed and drained
- 1 can (14.5 oz.) diced tomatoes, undrained
- 1 can (8 oz.)tomato sauce

In 4-quart saucepot, melt Shedd's Spread Country Crock® Omega Plus over medium heat and cook onion, green pepper, garlic and ground chipotle chile pepper, stirring occasionally, 5 minutes or until vegetables are tender. Stir in ground beef and cook until browned, about 5 minutes. Stir in remaining ingredients. Bring to a boil over high heat. Reduce heat to low and cook, stirring occasionally, 5 minutes or until heated through. Serve, if desired, over hot cooked rice with shredded cheddar cheese.

Baked Potato Soup

- 2 medium baking potatoes (about 12 oz. ea.)
- 3 cups milk
- 1/3 cup Shedd's Spread Country Crock® Omega Plus
- 1 small onion, chopped
- 1 can (14.5 oz.)chicken broth
- 1-1/4 tsp. salt
- 1-1/2 cups shredded cheddar cheese (about 6 oz.)

Preheat oven to 400°. Pierce potatoes with fork. On baking sheet, arrange potatoes and bake 1 hour or until tender; cool completely. Peel and coarsely chop potatoes. In blender, process potatoes with milk until smooth; set aside.
In 4-quart saucepot, melt Shedd's Spread Country Crock® Omega Plus over medium heat and cook onion, stirring occasionally, 5 minutes or until tender. Stir in potato mixture, broth and salt. Bring to a boil over medium heat, stirring occasionally. Remove from heat and stir in 1 cup cheese. Cover and let stand 2 minutes; stir until smooth. To serve, sprinkle with remaining 1/2 cup cheese and serve, if desired, with chopped green onions and sour cream.

Creamy Lemon Chicken With Pasta & Broccoli

- 1 lb. boneless, skinless chicken breast halves, cut into thin strips
- 4 tbsp. Shedd's Spread Country Crock® Omega Plus Light
- 1 small onion, chopped
- 1 clove garlic, finely chopped
- 3/4 cup chicken broth
- 4 ounces Neufchatel cheese or 1/3 less fat cream cheese
- 1 box (10 oz.) frozen broccoli florets, thawed
- 8 ounces spinach bow tie pasta, cooked and drained
- 1 tbsp.lemon juice

Season chicken, if desired, with salt and ground black pepper. In 12-inch nonstick skillet, melt 2 tablespoons Shedd's Spread Country Crock® Omega Plus Light over medium-high heat and cook chicken, stirring occasionally, 4 minutes or until almost cooked. Remove chicken and keep warm.
In same skillet, melt remaining 2 tablespoons Spread and cook onion, stirring occasionally, 4 minutes or until tender. Stir in garlic and cook 1 minute. Stir in broth and cheese. - 1/4 cup Shedd's Spread Country Crock® Omega Plus Light
- 2 shallots or 1 small onion, peeled and chopped
- 1 bag (12 oz.) cranberries
- 3/4 cup sugar
- 1/2 cup orange juice
- 1 cup chopped walnuts, toasted
- 1/2 tsp. grated orange peel

In 2-quart saucepan, melt Shedd's Spread Country Crock® Omega Plus Light over medium heat and cook shallots, stirring occasionally, 6 minutes or until very tender. Stir in cranberries, sugar and orange juice. Bring to a boil over high heat. Reduce heat to low and simmer, stirring occasionally, 12 minutes or until most of the berries burst; cool 10 minutes.

- 1/3 cup sugar
- 2 tbsp. cornstarch
- 4 cups fresh blueberries or 2 bags (12 oz. ea.) frozen blueberries, thawed
- 2 tbsp lemon juice
- 3/4 cups cup all-purpose flour
- 3/4 cups old fashioned or quick cooking oats
- 1/2 cup firmly packed light brown sugar
- 1/2 cup Shedd's Spread Country Crock® Omega Plus

In large bowl, combine sugar with cornstarch. Stir in blueberries and lemon juice. Turn into 8-inch baking dish; set aside.
In medium bowl, combine remaining ingredients. With fingers, gently squeeze flour mixture to form crumbs; evenly sprinkle over blueberries.

- 2 tbsp. cayenne pepper sauce
- 2 (10-in.) burrito size whole wheat tortillas
- 1/2 cup crumbled blue cheese or shredded cheddar cheese (about 4 oz.)

In medium bowl, combine chicken, celery, carrot and cayenne pepper sauce. On tortillas, spread mixture on one side. Sprinkle with cheese, then fold over.
